The crew of the Royal Polaris takes great pride in making sure your catch arrives at Fisherman’s Landing in pristine condition. A layer of ½ inch rubber matting has been laid on the entire aft deck from the end of the cabin to the stern. This eliminates any damage to your fish when it is laid on the deck. The fish is quickly spiked and bled. In addition larger fish are gilled and gutted to promote faster cooling. If you choose, your catch will go directly into refrigerated salt water (RSW) to ensure maximum freshness. With this process, your catch will arrive at the dock in a sashimi grade condition.

 

At the end of your trip, two outstanding fish processing companies will meet the boat: Sportsman’s Seafood (Mario Ghio, 619-224-3551) and Five Star Fish Processing (Andy and Sarah Saraspe, 619-299-9996). Both offer excellent same-day service. The company you choose will transfer your fish to dockside iced slush-tanks. The fish will be filleted, vacuum packed and ready for pick up that same afternoon. This process costs $.75 per pound whole weight.

 

For your frozen catch, Sportsmen’s Seafood and Five Star Fish Processing both offer reliable filleting and smoking services. Your catch will be processed to your specifications and vacuum packed – to be picked up at a later date. Shipping service to any major airport in the United Sates is also available.

 

Because of their excellent service, these are the only two fish processors endorsed by Royal Polaris.

 

Passengers who wish to do their own filleting can pick up their fresh fish at the top of the dock. They should be prepared to put the fish into a container of ice.

 

Canning Option: If you are interested in canning all or a portion of your catch. Fisherman’s Canning will be on hand to exchange Albacore, Yellowfin Tuna, Bluefin Tuna, Yellowtail and Wahoo. The standard pack of Albacore continues to be available; however, you may also get canned Albacore, Yellowfin Tuna, Yellowtail and Wahoo with olive oil or jalapeno.
